For a hotel lobby with walnut, bronze, cream stone, and 2700K architectural lighting, I would usually begin with a 2700K or 3000K halo sample.

The hard rule is simple: match the sign to the space. Do not choose 6000K because a supplier says it looks brighter in a factory video.
